Low Fat Mincemeat
- 225g (8 oz.) mixed dried fruit
- 150g (5 oz.) cooking apples (Peeled and Grated)
- ½ teaspoon mixed spice
- 150ml ( ¼ pint) sweet cider
- 2 teaspoons rum
- Put the dried fruit in a small saucepan. Add the grated apple, mixed spice and cider. Simmer for 20 minutes or until the mixture has formed a pulp and most of the liquid has evaporated.
- Stir in the rum. Pack into sterilised jars and store in the refrigerator until required.
